fun project for @stoelzlelausitz I absolutely lo fun project for @stoelzlelausitz  I absolutely love projects like this, where I get to play around with food—and the models get to interact with it, taste it, and genuinely enjoy the whole experience. Those authentic moments always translate into the strongest images.  Sometimes it’s refreshing not to focus on specific recipes, but instead to showcase beautiful products through interesting colors, creative cuts, and different cooking techniques. In the Rhineland we call them Rievkooche. In Switz In the Rhineland we call them Rievkooche.
In Switzerland they’re known as Rösti.
In Jewish tradition they’re called Latkes.  Potato Puffer have many names.
But they all share one rule:
Soft on the inside. Crispy on the outside.  This is my version — with beetroot.
Paired with a spicy dill & pickles dip.  Have crunch!  ⸻  Beets & Potato Puffer  Makes about 12 fritters  300 g potatoes
200 g beetroot
1 red onion
20 g cornstarch
1 tbsp fresh thyme
½ tsp chili flakes
10 g salt  Grate potatoes and beetroot coarsely.
Salt lightly, let sit 5–10 minutes, then squeeze out as much liquid as possible.  Mix with finely sliced red onion, cornstarch, thyme, chili flakes and salt.  Form into small flat patties.
Fry in hot oil over medium heat until deeply golden and crisp on both sides.
Drain briefly on a rack.  ⸻  For the dill pickle dip:
150 g sour cream
60 g mayonnaise
2 tbsp finely chopped dill
60 g finely chopped chili pickles
1 tsp “Salz Zitrone” by @cool_toppings 
Salt to taste  Mix everything until smooth. Adjust seasoning.  Serve immediately.  #seasonalfood #potato #latkes #kartoffelpuffer  #crispyfood

As much as I’m glad a slightly calmer phase is ahead, I’m excited to see what the Year of the Fire Horse still has in stable. Every time I sit down and start carving, I realize how much I missed it — even though I never really got started. It just feels like an instinct: turning a random piece of wood into something unique and useful. It makes me so happy every time! The year has been underway for quite some time now The year has been underway for quite some time now, but it’s never too late to say thank you. Thank you, 2025.  Somehow, 2025 was a strange year for me. After several rather mixed years, I started last year with real concerns about what lay ahead. For me, for the industry, for the world.  Fortunately, those doubts – at least on a personal level, aside from the political situation – did not come true. 2025 was great. A lot happened. Including more than one professional milestone. And privately, there was more than one highlight as well.  Thank you to everyone who accompanies me, supports me, finances me, and is simply part of my life. ❤️  Let 2026 continue just like this. Just without political doom, please.  Thank you for all the wonderful projects I’ve had the chance to initiate and bring to life—such as caterings, cookbooks, my personal blog about German cuisine, @beyond.bratwurst , my soon-to-be small food brand @cool_toppings and more. For those who are interested in my first 2026 sour For those who are interested in my first 2026 sourdough  my no.1 hack for long lasting moist crump - somekind of porridge(so called „quellstück“ in german). I like to use whole grains or groat as it absorbs lots of water.  Rye Groat Sourdough  Flour mix (1 kg total):
500 g wheat flour T65
250 g whole wheat flour
150 g wheat flour 550
100 g whole rye flour  Additions:
175 g active wheat sourdough starter (100 % hydration)
700–730 g water total
28 g salt
1 tsp diastatic malt
1 tbsp psyllium husk
100 g freshly milled rye groats  Cover rye groats with hot water and soak 3–4 h (or overnight).  Autolyse:
Mix all flours with approx. 650 g water (flour & water only). Cover and rest 1 h.  Add starter, soaked rye groats, malt, psyllium and remaining water. Mix until just combined, then add salt. Target dough temperature 24–25 °C.  Bulk ferment 3.5–4 h at room temperature. Stretch and fold every 30 min during the first 2 h, then rest until visibly aerated.  Divide dough in half.  Dough 1: shape round, gently fold, place seam-side up in a floured round banneton, cover with foil, cold ferment overnight.  Dough 2: shape tight round, transfer to a greased loaf pan, lightly moisten surface and top with poppy seeds, golden flaxseed and black sesame. Cover and cold ferment overnight.  Bake next morning:
Round loaf in preheated cast-iron pot: 250 °C, 20 min covered, then 20–25 min at 220–230 °C uncovered.
